For the absolute best eating experience we recommend a digital instant read thermometer be used. Cook to an internal temp of 145 F, which will still be slightly pink in the middle of the chop. 1.00 lbs. Pork Shoulder Steak, $14.95/lb. This less well known cut is pretty great. Like all cuts from the shoulder it can be slow cooked, but it also is tender enough to grill. It won't be as tender as a pork chop, but its flavor is exceptionally rich. Try substituting it in smothered pork chop recipes, or any other richly seasoned recipes.
