I've mentioned a number of times about the volume of roots I have to eat to get many calories. Here's a visual demonstration. The small stack of tallow on the left is roughly equivalent in calories to to the rutabaga on the right. That's a big root too, more than 4 pounds. At roughly 200 calories per pound I need to eat that thing or its equivalent almost every meal. I prefer to go heavier on the fat when I can because I feel a little less turgid when finished with a meal. Tallow is about 200 calories per ounce.
Back-of-the-envelope calculations with rounding means that the roots are 85% water weight. Huh. No wonder I drink less than I used to.
