Meaty neck bones can be put to good use in several applications. They're good in the crockpot and then pulled apart and blended with veggies. They're good for making a super rich broth. They're great as an all-in-one source for stew (broth and meat). And they can substitute for oxtail in a pinch. The texture of the fibers isn't quite the same as those in the tail, but they're not too dissimilar. Both cuts are heavily exercised, collagen rich, and the bone extraction provides extra flavor and minerals in the finished meal.
