Also known as 'tenderloin', filet mignon is a premium cut from the inner loin, a muscle that does little work and hence is extremely tender. On average this is one of the leaner grilling cuts we produce so it's hard to over emphasize the importance of using a digital instant read thermometer when cooking filet. Ruining a pound or two of filet by over cooking will easily pay for the cost of a quality thermometer.
