This might just be the greatest steak of all - richly marbled, tender, juicy, and flavorful. As with anything subjective other opinions are perfectly valid, but to Edmund's mind a grass-fed Delmonico strikes the best balance between tenderness and flavor of all the cuts of beef. Cooked medium rare they are beyond compare. The Delmonico is also called a "rib-eye".
