Chuck Eye is the heart of a chuck roast trimmed of bone and big bands of connective tissue. It comes from deep in the hard-working shoulder, which means it is a tough but flavorful cut. To properly prepare a Chuck Eye it should be braised or pot roasted for several hours until softened.
