This less well known cut is pretty great. Like all cuts from the shoulder it can be slow cooked, but it also is tender enough to grill. It won’t be as tender as a pork chop, but its flavor is exceptionally rich. Try substituting it in smothered pork chop recipes, or any other richly seasoned recipes.
