The summer-like heat of a few weeks ago prompted me to come up with a refreshing drink. I don't have much to work with, but in the back of the fridge I did find some elderberry "jelly" I made last fall while preparing for this year. I didn't reduce it far enough though, so it runs more than gels. I put a tablespoon of elderberry reduction in seltzer, "sweetened" with a tablespoon of maple syrup, and added a mint leaf for one more flavor. Not quite soda, but perhaps that is for the best.
